Description
Based in a central Birmingham railway arch, the winery makes the most of the viaduct’s cool, cave-like environment to naturally ferment and age every wine. Fruit is sourced from pioneering and conscientious growers across the middle of England, with a focus on Pinot Noir, Pinot Blanc, and Chardonnay. Alongside these, historic hybrids and newer PIWI varieties are used to bring a bit of extra character and resilience to the lineup. A minimal-intervention path is followed in the cellar, where small batches are fermented in barrels or tanks and left to rest on the lees. Everything is hand-blended and bottled on-site without being fined or filtered, keeping the focus entirely on the honest expression of the fruit and the unique atmosphere of the urban cellar.
