Description

Limeburn Hill was planted in 2015 by Robin and Georgina overlooking the beautiful Chew Valley in Somerset. They are certified Biodyamic and use only plant-based teas and treatments plus accelerated composts to boost plant health and reduce susceptibility to mildews. They grow their nine varieties on a high trellis to make the most of drying breezes and to keep delicate new leaves above ground frosts. Limeburn Hill makes predominantly Pet Nat (petillant naturel) sparkling wines, alive with natural wild yeasts from the skins, and following the ancestral method of a single fermentation finished in bottle. Their style is for clean, fresh and joyful wines with a pleasing balance of fruit and acidity that is truly representative of the year and the soil in which the vines are grown. The winemaking uses skin contact to extract colour, flavour and tannins which replace sulphites as a natural preservative, with fermentation in steel tank for clarity of expression. The wines are disgorged of sediment, but not filtered or fined. At Unfiltered, Robin and Georgina will be presenting their 2025 amber, rosé and red Pet Nats, along with a taste of their eau de vie de vin spirits which are made from wine collected during the disgorging process. One is a pure and smooth spirit, while the other is macerated with quince fruit. All being well we will also be introducing our first still wine, a skin contact orange blend… On the table: Beltain – Amber Pet Nat 2025, 10.5% Lammas – Rosé  Pet Nat 2025, 11.5% Samhain – Red Pet Nat 2025, 10.5% Genius Loci – Eau de vie de vin, 40% Qindred Spirit – Quince eau de vie de vin, 25%
